View Full Version : As promised - Szechwan Orange-Ginger Chicken Stir Fry

4-chicken breasts(skinless/boneless)
1-sweet green pepper
1-sweet red pepper
1 tsp-bottled chilli paste
2 tbsp-Sherry
1 tsp-sugar
1 tsp-cornstarch
2 tbsp-vegetable oil
1 tsp minced garlic
1 tbsp minced fresh ginger root

Cut chicken into 1 inch cubes and set aside. Clean out peppers and cut into small squares. Using veggie peeler, remove rind from orange(skin only no white). Cut rind into Julienne strips about 1 1/2' long and set aside. Squeeze orange and reserve 1/4 cup of juice. In a small bowl combine reserve orange juice, chili paste, sherry, sugar and cornstarch and stir it until it looks like a paste. In wok, heat oil over high heat; cook chicken and stirfry for 2 mins or until no longer pink, remove chicken. Add orange rind, garlic, ginger root and stirfry for 10 seconds then add peppers and fry for 1 min. Add chili mix and bring to boil. Return chicken to wok and stir fry until fully heated through. You can cook rice as well and mix it in at serving time. Makes 4 servings.
