Spicy Chicken Salad

Spicy Chicken Salad
Oh my goodness, it is like heaven!! It's great with crackers, corn chips, or as a sandwich.
• 1 large or 2 small cans chicken breast
• 1 package cream cheese
• 2½ tbsp. mayonnaise
• Salt and pepper
• 1/2 cup pace picante
• Thinly diced onion
• 1 small Thinly diced fresh jalapeno "wash hands well after cutting"
• ¼ cup crushed Club or Ritz crackers
Mix all ingredients until smooth and well combined. We don't know how long it lasts in the fridge because we just eat it until it's gone!

hehe, I learned this lesson the hard way after cutting jalapeno's for a slow cooked chili. I gave my hands a cursory rinse and put in my contacts ... just thinking about it makes my eyes burn a year after the incident.

Thanks for the idea, we'll try this recipe this week!
